Sous Chef - Indian

We have an exciting opportunity for a Sous Chef - Indian to join Cinnamon Life Integrated Resort, the much anticipated 1 billion USD project, opening in late 2024. Cinnamon Life Integrated Resort is a part of Cinnamon Hotels & Resorts, Sri Lanka's largest Hotel owner with a portfolio of 15 Hotels and Resorts in Sri Lanka and the Maldives. It is a member of John Keells Holdings PLC, one of the largest listed conglomerates in Sri Lanka.

Your role, reporting to the Chef de Cuisine, Indian, will play a pivotal role in crafting an extraordinary Indian culinary experience. Your creative canvas will span a palette of vibrant spices, and your artistic approach will blend traditional techniques with contemporary flair. With your passion and expertise, you will contribute to the creation of a culinary legacy where each meal becomes a celebration of culture and a testament to culinary excellence.

You will contribute to the planning and development of an authentic and diverse Indian menu, introducing new dishes and seasonal offerings that align with customer preferences and culinary trends. Your proficiency in various Indian cooking techniques, spice combinations and flavour profiles will ensure the high-quality and authentic execution of dishes. You will manage and organize the Indian kitchen, overseeing workflow, staff schedules and task delegation to ensure a smooth and efficient operation during service hours. Rigorous quality control measures, including regular checks on ingredients and monitoring food presentation, will be integral to maintaining the high standards of Indian cuisine. Additionally, you will train and lead your team, ensuring strict adherence to hygiene and safety regulations. Demonstrating a keen eye for cost control measures, you will adeptly minimize wastage and optimize portion sizes. Actively engaging with our guests, including VIP patrons, will be crucial to delivering an exceptional and seamless dining experience.
