HEAD BUTCHER
We have an exciting opportunity for a Head Butcher to join Cinnamon Life Integrated Resort, the much anticipated 1 billion USD project, opening in late 2024. Cinnamon Life Integrated Resort is a part of Cinnamon Hotels & Resorts, Sri Lanka's largest Hotel owner with a portfolio of 15 Hotels and Resorts in Sri Lanka and the Maldives. It is a member of John Keells Holdings PLC, one of the largest listed conglomerates in Sri Lanka.
Reporting to the Executive Sous Chef, you will spearhead our butchery operations, orchestrating a symphony of flavour and quality in every cut. Your responsibilities extend beyond mere management; you will inspire and lead a team committed to the pinnacle of craftsmanship. As the visionary leader of our butchery operations, you will not only redefine standards but also deliver unmatched experiences at the core of Cinnamon Life's culinary pursuits.
As the Head Butcher of Cinnamon Life Integrated Resort, you will assume comprehensive responsibility for the management, administration and operations of the butchery, providing crucial support to our outlets. Your leadership will extend to guiding and overseeing the butchery team, ensuring unwavering adherence to HACCP and ISO standards for the delivery of exceptional food and beverage experiences. You will lead by example through a passionate and hands-on approach, fostering an atmosphere of innovation and creative thinking. Your role encompasses the preparation of budgets, forecasts and capital expenditures, whilst analyzing outlet revenue trends and reservation projections, taking corrective measures as necessary to maintain financial success. Rigorous control over the sourcing of produce from approved vendors is paramount, with reporting procedures in place for any deviations from standards. Exceptional personal guest interaction skills will be at the forefront, as you engage with our guests and VIP guests on an entertaining and informative level, actively seeking direct feedback to ensure the highest level of guest satisfaction.
