Chef de Cuisine - Commissary

We have an exciting opportunity for a Chef de Cuisine Commissary to join Cinnamon Life Integrated Resort, the much anticipated 1 billion USD project, opening in late 2024. Cinnamon Life Integrated Resort is a part of Cinnamon Hotels & Resorts, Sri Lanka's largest Hotel owner with a portfolio of 15 Hotels and Resorts in Sri Lanka and the Maldives. Reporting to the Executive Sous Chef, Commissary, you will lead the charge in crafting exceptional culinary experiences, seamlessly blending tradition with innovation. Your expertise will play a pivotal role in menu development, quality control, and fostering a culture of culinary excellence. With your passion for redefining the art of dining, you will create exquisite dishes that narrate a story of precision, passion, and unparalleled excellence.

You will be tasked with overseeing and administering the culinary operations of the commissary kitchen. Your responsibilities will include creating and developing menus, designing dishes that can be efficiently produced in large quantities and coordinating the distribution of these items to the various outlets served by the commissary kitchen. Additionally, you will be responsible for managing inventory control, with a focus on minimizing waste to ensure the smooth and efficient operation of the commissary kitchen. You will also play a key role in financial management by preparing the department's budgets, forecasts, and capital expenditures. Additionally, you will analyze revenue trends and reservation projections, taking corrective measures when necessary to ensure cost control within the assigned budget while delivering the desired quality to guests. Your support and leadership will be crucial in ensuring full adherence to HACCP and ISO standards, guaranteeing the delivery of exceptional food and beverage experiences. You will actively engage with our guests and VIP guests, spending time with them on an entertaining and informative level, actively seeking direct feedback and promptly resolving concerns to ensure the highest guest satisfaction. Upholding the highest standards of professionalism, ethics and maintaining a positive attitude towards clients and colleagues, you will contribute significantly to the culinary excellence of our hotel.
